The principal demand at milk collection is its cooling and cleaning.
The temperature of freshly-milked milk is 37°C. There are no bacteria in udder's exit practically. The environment is the main factor influences on the bacterial seeding . They are the hygiene of working place, udder's cleanliness, and state of animal's litter, climatic and hygienic housing conditions. As a result, microbes of different origin and degree, litter straw, animal hairs enter the fresh milk.
It is necessary to clean milk before cooling. The milk can be cleaned by two methods: filtering and centrifugation.
Theoretically filters and milk centrifugal cleaners are equally efficient. Though, the service life of a filter is about one hour. After that it is necessary to replace the filtering element. Thereby they use so called sets of filters and protective filters. At the same time centrifuges, or separators for milk cleaning can be used some days running depending on their design configuration. Moreover, applying filters you cannot control integrity of filtered surface as well as ensures the protection against repeated bacterial seeding of newly incoming milk. The application of separators removes such problems as sediment settled in separator is unloaded manually or automatically through specified time frame..

For the reason that milk is an excellent medium for microbes growth, milk must be cooled as quick as possible after milking. The optimal temperature for milk storage is 4°C. The activity of bacteria is very low. But it is important not only to cool but safe milk at this temperature as the microbes start to grow more, as soon as temperature increases. For comparison, the content of bacteria in milk at temperature 4°С is practically invariable over the day. If the temperature increases up to 15°С, the content of microbes will arises from 300 000 to 1 million/ml within 12 hours; at temperature 20°С - up to 3 m./ml.; at temperature 25°С - up to 100 m/ml and etc..
In order to safe and cool milk at specified temperature the cooling tanks are use. This equipment allows to cool milk up to 4°С and save it at this temperature till following processing.

The milk cooling method is direct (direct contact of milk with evaporator's wall). The reliable thermal insulation ensures that the milk temperature will increase no more than in 1°C for four hours, if the power is off. The milk cooling tanks are equipped with different washing systems that guarantee the qualitative sanitization of equipment depending on packing arrangement.
In case of large volumes of milk, where the cooling time plays the important role, the cooling tanks are equipped with heat exchangers for pre-cooling of milk, that ensures the shorter cooling period and more reasonable use of milk cooling tank.
